Crafting Turmeric and Oat Soup

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and grated ginger to the pot, and sauté for an additional minute until fragrant.
  3. Stir in the ground turmeric and ground cumin, allowing the spices to toast for about 1 minute.
  4. Add the rolled oats to the pot and continue to cook for an additional 2 minutes, stirring to coat the oats with the spices.
  5. Pour in the vegetable or chicken broth, and add the diced carrots and sweet potatoes. Bring the mixture to a boil, then reduce the heat to simmer. Cook until the vegetables are tender, usually about 15-20 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Pour in the coconut milk and stir well. Allow the soup to simmer for an additional 5-10 minutes to let the flavors meld.
  8. Taste the soup and adjust the seasoning if needed. If desired, add a squeeze of fresh lime juice for brightness.
