INSTRUCTIONS:
- Prepare the Lemon Filling:
- In a mixing bowl, combine the sweetened condensed milk, freshly squeezed lemon juice, and lemon zest. Stir until well combined and smooth. The mixture should be thick and creamy.
- Layer the Icebox Cake:
- Spread a thin layer of the lemon filling on the bottom of a 9×9-inch baking dish or a similar-sized serving dish.
- Arrange a single layer of Ritz crackers on top of the lemon filling, breaking them into smaller pieces if necessary to fit the dish.
- Spread another layer of lemon filling over the crackers, followed by a layer of mixed berries. Repeat the layers until you’ve used all the ingredients, ending with a layer of berries on top.
- Chill and Set:
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate the icebox cake for at least 4 hours, or preferably overnight, to allow the flavors to meld and the crackers to soften.
- Garnish and Serve:
- Before serving, remove the plastic wrap or foil from the baking dish.
- If desired, garnish the Lemon-Berry Ritz Icebox Cake with dollops of whipped cream and fresh mint leaves for a festive touch.
- Slice and Enjoy:
- Use a sharp knife to slice the icebox cake into squares or rectangles, then transfer the slices to individual plates or serving dishes.
- Serve the Lemon-Berry Ritz Icebox Cake chilled, allowing your guests to enjoy the refreshing combination of tangy lemon, sweet berries, and crispy Ritz crackers with each delightful bite.
