How To Make Big Apple Fritters

I was trying to replicate the Apple Fritters that the convenience store chain, QuikTrip, used to have. The ones they have now are just not the same. This recipe came darn close with the couple of modifications I made. As suggested, I doubled the nutmeg and added 1 tea. Cinnamon. I also increased the sugar to 1/3 cup. As suggested by another reviewer, I diced the apples and microwaved them for 4 minutes, then put them, liquid and all, into the batter and dropped the batter in 1/4 cupfuls into hot oil. Instead of dusting with sugar when done, I made a glaze of 1 cup confectioner’s sugar, 1 Tbsp. light corn syrup and 2 Tbsp. water, and drizzled that over the fritters. It dries to a sweet, slightly hard and crunchy glaze on the fritter. My husband says these are closer to the old QT fritters than what they have in the store now, but could be fried just a bit thinner and crispier. Next time I’ll add one more apple and see if that doesn’t thin the cakey-ness down just a hair. Great recipe!

We also found that we preferred the flavour of these cookies without those two ingredients. They are absolutely not needed in this sugar cookie recipe.

Also, we chill the dough before rolling so that after you’ve cut them out, they’re easier to lift off of your bench and arrange onto your baking sheet, maintaining their shape while baking.

I really like these muffins. They’re great plain, with a little streusel-like layer of cinnamon/sugar and chopped toasted pecans in the center and a baked topping of the same mixture. An icing glaze drizzled on while they’re still warm is nice too.

I use almond milk or coconut milk instead of dairy milk and it works just fine. My oatmeal is old-fashioned organic and it tends to be a bit thick, so I gave it a few pulses in the food processor.

This recipe works well with variations. A now-closed muffin shop in my town used to make oatmeal-peach muffins that were delicious and addictive. The second time I made these I added about a cup of chopped frozen peaches (thawed before chopping of course). They were wonderful and made the muffins more moist. I think the recipe would also be good with apples, blackberries, raspberries, bananas or mangoes but I haven’t tried them yet.

Self-rising flour isn’t readily available in all parts of the country and probably not at all in foreign countries, so it’s not a universal ingredient. That might be why there are so many questions about it. I don’t think I’ve ever seen it in the stores where I live because of altitude.
