Stephen is from the south and it seems that everyone there knows corn croquettes. I had never heard of him before I met him. He always wanted me to figure out how to make them. Since I had never had them before, I tried the Allrecipes recipe.com and it was a bit of a hassle because you had to take the corn mixture, put it on the baking sheet and freeze it before frying the nuggets.

The only problem was that the corn mixture flattened before it started to freeze, so it tasted more like patties than croquettes and just didn’t taste good. After some experimentation and a brilliant idea from Stephen, we finally succeeded, at least by Stephen’s standards, and that was all I had to decide! It’s a great appetizer,
main course, game snack, whatever.
And while I’m harvesting the corn, a little “Corn Bandit” is waiting to get the cob (see photos)…Try it and tell me what you think…
