Buckeyes are peanut butter fudge candy balls dipped in chocolate. They’re called buckeyes because they look like the nuts that grow on Ohio buckeye trees. This recipe for buckeye candy is so good that I double it whenever I make it.
18oz Peanut Butter Jar
¼ Cup Butter
2 Cups Powdered Sugar
½ teaspoon Vanilla Extract
12 oz bag of Nestle’s Semi- Sweet Morsels
I printed this recipe years ago, but I never had the need for the sauce until recently. Boy, am I glad I did! I’ve taken it to two parties and had many people ask me for the recipe. They’re surprised at how easy it is. The leek soup mixture is the key ingredient, and it tastes much better than the vegetable (IMHO). I used a full 10 oz. package of spinach (you need it for texture), and doubled the recipe. It works best if you squeeze as much liquid out of the spinach as you can. Otherwise, it might be too liquid. Overall, it’s quick, easy, delicious, and will become a staple of my entertainment!
