For reasons unknown, whenever mom was away, it was enchiladas night, courtesy of dad. And thank heavens, because his version was absolutely scrumptious.
Back in the day, dad’s classic recipe usually revolved around ground beef or chicken. But as I’ve grown older, my palate craves innovative vegetarian delights. The thought of fusing spinach with cheese inside an enchilada sounded like an irresistible idea, reminiscent of the creamy richness of spinach dip. The result? Absolutely heavenly. Despite the generous serving this recipe offers, we managed to devour the entire batch in just a couple of days.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, finely chopped
  • 12 cups fresh spinach leaves
  • Juice from half a lime

  • ¼ cup fresh cilantro, finely chopped

You may use this recipe on one of your barbecue parties and I’m sure it would be a hit. Ensure you serve them fresh and do not reheat it and have as the steak would go dry from inside. The key is to ensure it is cooked perfectly for that juicy steak. The skillet or the barbecue should be heated well before placing the steaks, once you place them, cook over medium heat or it would get charred from outside and undercooked inside. Also, ensure the patties are of equal portions to ensure consistent cooking time. You can strain the gravy for a smooth feel if you prefer so. Serve everything hot with a creamy bowl of mashed potatoes and some salad. Enjoy that perfect meal ! You are welcome !

For the Patties:

  • 3 tablespoons of cooking oil (canola, vegetable)
  • 1-1/2 pounds of 80/20 ground chuck

How To Make Chicken Spaghetti Casserole

For some reason or other, this seems to be a favorite of the men in my family.
YUM! We loved this. I made it with 1 lb of spag..so increased the soup to 2 cans, de-boned a rotisserie chicken (approx 4 cups) and doubled the veggies only increased the cheese by 1/2 cup and it was so good and creamy!

Good recipe! I used canned chicken and since I didn’t have cheddar cheese on hand, I used a pizza blend shredded cheese. Yummy!

We enjoyed this. It is a good recipe to use up left-over chicken. Instead of pimentos, I used sliced green olives with pimentos.

I loved this recipe because it was different from other casseroles. I added a can of Rotel tomatoes and had to add chicken broth to make this come together well. It was delicious and I will definitely make it again.

How To Make CLASSIC CREAMY PEA SALAD

I offer you an idea for a complete vegetable and grain-free salad based on pasta with peas.
So “for once” the manufacturers find a great idea, you have to talk about it, use it and don’t hesitate … If you don’t know legume pasta, try it … (I already talked about it here).
In fact, it is relatively new in supermarkets but not in organic stores, the market has expanded to the traditional and this is very good … They are present under different brands such as Carrefour, Bonduelle, Barilla and in various forms, chickpeas, peas, coral lentils.
Interest?
Without wheat, and whether you are “gluten-free” or not, it will always be beneficial to have less wheat in your dishes, less starch than traditional pasta, low glycemic index, and plenty of vegetable protein (twice as compared to classic pasta).
So, if you are a fan of pasta of all kinds and if you compare legume pasta to wheat pasta, I can already tell you that you will definitely not like it. Now, if you can manage not to compare, if you’re a bit open minded and worry about eating healthy by consuming more variety, you should be in for a treat. For this you may have to do it several times, look up your recipe and test the different varieties, see the different brands… but it will be worth it and it will help you to diversify the content of your meals.

How To Make Cream Cheese Squares

I LOVED this… I had to make it my own, so I made the cream cheese layer (with splenda blend) and tried variations to it by spreading a layer of either apricot, blueberry, blackberry or strawberry sugarfree preserves over the cream cheese then finishing off with the crescent dough and butter and splenda blend sprinkled on top… OMG, I had to make this 3 times in 2 days due to so many people loving it over the holidays!!! No one could guess it was sugarfree.. the fruit topping over the creamcheese really gives it kick! My fav were the blueberry ones, and the apricot… with the apricot I crushed 1/2 C of pecans and sprinkled those over the top with cinnamon and splenda blend.. that was sheer heaven. Even better the next day if thats even possible! I am thinking about trying this with a variation of no sugar, but using a packet of hidden valley ranch powder and bacon and maybe some sundried tomatoes… maybe butter and parmesan on top?… I will let you know!
