These lemon meltaway cookies are crunchy, sweet and melt in your mouth as you eat them. The cookies are easy to make and don’t require any flour or eggs. They store well and can be made ahead of time for a party or gifting.
I love making meltaway cookies. These little round morsels are so cute and make a nice sweet treat. This lemon version is my new favorite one. The lemon adds so much flavor and it reminds me a little of eating lemon bars.
WHAT ARE LEMON MELTAWAY COOKIES?
These meltaway cookies are a lemon flavored version of sequilhos (Brazilian cornstarch cookies). I explain more in my 3 Ingredient meltaway cookies recipe. My version is slightly different from the traditional ones in that I use less cornstarch so the cookies are a little less starchy and a little more like shortbread.
1 cup Butter (Sweet Cream Salted)
1 cup Granulated Sugar
1/2 cup Brown Sugar

Christmas Cherry Maraschino Shortbread Cookies
Even though it’s Thanksgiving, most food bloggers are thinking about Christmas. Of course, those of you for whom cooking blogging is a full-time job or hobby already have something to do, even if everyone else does it a few weeks later. And with Christmas just a few weeks away, most of you probably only have one thing on your mind: Christmas cookies like the classic chewy chocolate chip cookie.
So all that was left was to start the story with shortbread cookies.In my case, that meant turning the cookie dough into a round log and keeping it alive for my husband. He also eats them raw. And in just an hour and a half, including almost an hour of rest in the fridge, here are my Christmas cookies with maraschino cherries, smiling from the table and tempting me with a beautiful combination of dark chocolate chips and red cherries
