Ingredients:

  • 1 (15.25 oz) can corn, drained
  • 1 (14.75 oz) can cream-style corn
  • 1 (8 oz) package Jiffy corn muffin mix
  • 1 cup sour cream (can use light)
  • 6 tablespoons salted butter, melted

  • 1 to 1 1/2 cups shredded sharp cheddar cheese

How To Make:

  1. Preheat oven to 350°F.
  2. Grease a 2-quart casserole dish.
  3. In a large bowl stir together corn, cream-style corn, corn muffin mix, sour cream, and melted butter.

I’m a big believer in Sunday meal prep. I don’t always make the time for it, but when I do I like to think of it as taking care of future Jen. Cooking dinner on weeknights can be a rushed, tiresome ordeal whereas making meals for the week on a Sunday afternoon can take on an almost zen-like quality. It’s relaxing. I turn on some music, maybe have a glass of wine… and I get down to business.

This Mexican tortilla casserole is a perfect recipe to prepare for the week because it’s fast, easy and it will keep in the refrigerator for several days. You can also cut it into single serving portions and freeze the leftovers. It makes great leftovers. It’s cheesy, flavorful and filling. Whether you’re preparing it in advance for the week or making it to serve on the same day, this is an incredibly satisfying meal.

BROCCOLI, RICE, CHEESE, AND CHICKEN CASSEROLE

This cheesy chicken broccoli rice casserole is very easy to make. You can leave out the onion but it does add flavor. It can be made ahead and frozen.

This was a great addition to our Christmas meal. My daughter-in-law, who is a vegetarian, had 3 servings! The grand-kids may not have loved it, but they ate it, that’s a win! The adults asked me to keep this recipe for the future. I loved that it was truly homemade! Thank you!

Ingredients:

2 cups water

2 cups uncooked instant rice

2 (10 ounce) cans chunk chicken, drained

1 (10.75 ounce) can condensed cream of mushroom soup

1 (10.75 ounce) can condensed cream of chicken soup

1/4 cup butter

1 cup milk

1 (16 ounce) package frozen chopped broccoli

1 small white onion, chopped

1 pound processed cheese food

How To Make Chicken Spaghetti Casserole

For some reason or other, this seems to be a favorite of the men in my family.
YUM! We loved this. I made it with 1 lb of spag..so increased the soup to 2 cans, de-boned a rotisserie chicken (approx 4 cups) and doubled the veggies only increased the cheese by 1/2 cup and it was so good and creamy!

Good recipe! I used canned chicken and since I didn’t have cheddar cheese on hand, I used a pizza blend shredded cheese. Yummy!

We enjoyed this. It is a good recipe to use up left-over chicken. Instead of pimentos, I used sliced green olives with pimentos.

I loved this recipe because it was different from other casseroles. I added a can of Rotel tomatoes and had to add chicken broth to make this come together well. It was delicious and I will definitely make it again.

I love it when I cook something and it is such a hit that I don’t have to worry about leftovers. It is sad though and a waste but leftovers tend to be forgotten about in our house and the dogs usually end up with a messy experiment or something tasty. They are dogs so they win either way.
