How To Make Stuffed Pepper Soup

If you love stuffed peppers, you will love this as a soup. It takes minimal effort and can be made in 45 min start to finish (with most of the time simmering so all the wonderful flavors can meld together).

The ingredient list is also not very long, with the main ingredients as ground beef, onion, bell peppers, and white rice.

Is this soup freezer-friendly? I will say that after some recipe testing, this soup will not freeze well with the rice as the rice can become mushy once thawed and reheated. If you plan to freeze, I recommend freezing without the rice, adding it in prior to serving. It will make all the difference.

My only ask is to serve with crusty bread, a light salad, and a sprinkling of mozzarella cheese right on top.

This is the best turkey meatloaf we’ve ever tasted. It’s really moist and makes great sandwiches.

If you’re anything like me, you grew up eating meatloaf and while some of you may not be a fan, I absolutely loved it!

Meatloaf was one of my favorite comfort meals my mom made as a kid which she made with ground beef, buttery Ritz crackers for the breadcrumbs and slathered it all in ketchup.

This recipe has all the basics of traditional meatloaf, but is a much healthier version using lean ground turkey, whole wheat breadcrumbs, fresh herbs and veggies, along with making our own delicious tomato glaze!

Ingredients:

1 tablespoon of salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon of paprika
2 racks of beef ribs
1 cup barbecue sauce (use your favorite brand, plus more for drizzling if desired)
Half a cup of water
1 teaspoon liquid smoke
1 medium onion (optional, sliced)

Directions:

In  bowl, combined salt, pepper, garlic powder, onion powder, thyme, also paprika.
1 tablespoon salt, 1 teaspoon ground black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon paprika
Rinse the ribs in cold water, then pat dry with a paper towel. Generously season the ribs with the spice mixture, making sure to rub the spices into both sides of the meat.
2 racks of beef chops
If time permits, let your ribs rest in the refrigerator for 24 hours (rub them thoroughly every 12 hours). This is also the point where the ribs can be frozen later.
Place racks in slow cooker and add barbecue sauce, water, liquid smoke, and optional sliced onions.
1 cup BBQ sauce, 12 cups water, 1 teaspoon liquid smoke, 1 medium onion
Cook the ribs over high heat for 5 hours.
To roast the ribs, line a baking sheet with aluminum foil, then place a baking rack on top. Place the ribs on the grill and cover generously with the BBQ sauce.
Put the tray in the oven under the broiler for a few minutes. Watch your ribs so they don’t burn.
Turn the meat and add more barbecue sauce. Then putting them back under the broiler for another 2 to 3 mn.
Remove the slices from the oven and let them rest for 5 minutes before serving.
