Grandma`s Fluffy Apple Pie Recipe

Ingredients:

For the Batter:

  • 2 eggs
  • 125g sugar
  • 100g butter
  • 100g flour
  • 1 teaspoon baking powder

For the Filling:

  • 750g apples (Cox Orange)
  • 2 packs custard powder
  • 0.5 liter apple juice (½ for stewing apples)

For the Custard Topping:

  • 3 eggs
  • 1 cup sour cream
  • 5 tablespoons sugar

Instructions:

  1. Prepare the batter by combining eggs, sugar, butter, flour, and baking powder. Bake it in a springform pan for approximately 20 minutes at 180 degrees.
  2. Core, peel, and stew the apples in a little apple juice. Drain them on a sieve. Bring 1/2 liter of apple juice to a boil, stir in the pudding powder (following the package instructions, replacing some water with apple juice). Fold the stewed apples into the pudding and bring to a boil until the mixture reaches a sticky consistency. Pour it onto the pre-baked dough, spread evenly, and bake for an additional 5 minutes.
  3. For the custard topping, separate the eggs and beat the egg whites until stiff. Mix the egg yolks, sour cream, and sugar together, then gently fold in the beaten egg whites. Spread the custard evenly on the cake and continue baking until the topping turns golden yellow.
