How to make pineapple cupcakes:
- Preheat oven 350 degrees.
- Mix the flour and sugar together for the crust mixture.
- Cut in cold butter to the mixture crumbles. Save 1 cup of this mixture for later use.
- Place remaining crust mixture in bottom of well-greased 9×13-inch baking dish.
- Bake for 15 minutes.
- Mix the filling ingredients together and spread over the previously baked crust in the baking dish.
- Top with reserved crumbled crust mixture.
- Bake for 1 hour.
- Leave to cook for 15-20 minutes
- Whisk the frosting ingredients together until smooth.
- Drizzle the frosting over the bars, adding half and half if necessary to reduce the frosting.
- Cut it into slices and serve.
