Spinach crepes

  1. Prepare the Batter: In a blender, combine flour, milk, eggs, chopped spinach, salt, pepper, and melted butter. Blend until the mixture is smooth and well combined.
  2. Rest the Batter: Allow the batter to rest for at least 30 minutes. This gives the flour particles a chance to absorb the liquid, resulting in a smoother batter.
  3. Cooking the Crepes: Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the pan.
  4. Pour and Swirl: Pour about 1/4 cup of the batter into the center of the hot pan. Quickly lift the pan off the heat, tilting and rotating it to spread the batter thinly across the bottom.
  5. Cook Until Edges Brown: Cook the crepe for about 1-2 minutes or until the edges start to brown. Use a spatula to flip the crepe and cook for an additional 1-2 minutes on the other side.
  6. Repeat: Repeat the process with the remaining batter, adding a small amount of butter to the pan before each crepe.
  7. Serve Warm: Once cooked, stack the crepes on a plate. Serve them warm with your favorite filling, such as sautéed vegetables, cheese, or a creamy sauce.
