Directions:
- Wash the potatoes and place them on a microwave-safe plate. Use a fork to poke some holes in them and microwave for 5 minutes. Turn them over and microwave for another 5 minutes. The potatoes should be tender, similar to a baked potato. Remove and allow them to cool enough to handle, then peel the skin off and place them in a mixing bowl.
- Using a potato masher, mash up the potatoes. Add the butter, sour cream, salt, and pepper. Stir well to combine.
- Spread the mashed potatoes in the bottom of a 2-quart casserole dish.
- Top the potatoes with 3/4 cup of the cheese and sprinkle the bacon bits and green onions over the cheese.
- Spread the cooked broccoli over the top.
- Top the broccoli with the remaining cheese.
- Cover with foil and bake in a preheated 350-degree oven for 20 minutes. Uncover and cook for an additional 10 minutes.
