- 3/4 c. granulated sugar
Carrot Cake:

- 2 Eggs
- 3/4 c. vegetable oil
- 1 c. granulated sugar
- 1 tsp vanilla
- 1 c. all-purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 (8 1/2 oz.) can (crushed) pineapple, well-drained with juice reserved
- 1/2 c. flaked coconut
- 1 c. grated carrots
- 1/2 c. chopped walnuts
- 1 generous pinch of salt
Pineapple Cream Cheese Frosting:

- 1 tbsp butter, softened
- 2 oz. cream cheese softened
- 1 3/4 c. powdered sugar, sifted
- 1 tbsp reserved pineapple juice
- Dash of salt
- 1/2 tsp vanilla
