Ingredients:

Cheesecake:

  • 3 Eggs
  • 16 oz. cream cheese (at room temperature)
  • 1 tbsp all-purpose flour
  • 1 tsp vanilla
  • 3/4 c. granulated sugar

Carrot Cake:


  • 2 Eggs
  • 3/4 c. vegetable oil
  • 1 c. granulated sugar
  • 1 tsp vanilla
  • 1 c. all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 (8 1/2 oz.) can (crushed) pineapple, well-drained with juice reserved
  • 1/2 c. flaked coconut
  • 1 c. grated carrots
  • 1/2 c. chopped walnuts
  • 1 generous pinch of salt

Pineapple Cream Cheese Frosting:


  • 1 tbsp butter, softened
  • 2 oz. cream cheese softened
  • 1 3/4 c. powdered sugar, sifted
  • 1 tbsp reserved pineapple juice
  • Dash of salt
  • 1/2 tsp vanilla
