Instructions:

For the Almond Cake:

  1. Preheat oven to 350 degrees (F). Grease and line two 9-inch round cake pans with parchment paper.
  2. Sift together cake flour, baking powder, baking soda, and salt in a large mixing bowl; set aside.
  3. In a stand mixer, beat butter until smooth. Gradually add sugar, beating on high for 2 minutes.
  4. Reduce speed and add beaten egg whites gradually, ensuring thorough mixing.
  5. Combine vanilla extract, almond extract, milk, and sour cream in a spouted measuring cup. Mix well.
  6. On low speed, add the sifted flour mixture in batches, alternating with the liquid mixture. Begin and end with the flour mixture.
