Cowboy Meatloaf and Potato Casserole

INGREDIENTS:

  • 1 Package Refrigerated Premade Potatoes Mashed
  • 1 lb. Beef Ground
  • ¼ cup BBQ Sauce
  • ½ Large Onion Chopped
  •  cup Bread Crumbs
  • 1 Large Egg
  • 1 cup Bacon Pieces
  • 2 tsp. Chili Powder
  • 1 cup Mexican Blend Cheese Shredded
  • Salt And Pepper To Taste

INSTRUCTIONS:

  • Preheat your oven to 375 degrees.
  • Place the ground beef, bbq sauce, bread crumbs, onion, egg, chili powder and salt and pepper in a mixing bowl, and blend until well combined.
  • Layer the meat in the bottom of a well greased 9×9 baking dish.
  • Bake for 20-25 minutes and drain excess grease.
  • Prepare the mashed potatoes according to the package and spread over the meat mixture.
  • Sprinkle the cheese on top of the potatoes.
  • Add the bacon on top of the mixture.
  • Broil for 3-5 minutes until the cheese has melted.
  • Enjoy!
