- Pat dry the potatoes.
- Rub olive oil all over and season with salt and pepper to taste.
- Poke small holes in the potatoes using a fork to facilitate moisture release during cooking.
- Transfer the oiled and seasoned potatoes to a prepared microwave-safe plate.
- Microwave one potato for 5 minutes at 100% power. Add additional potatoes and microwave for an extra 2 minutes for each addition.
- Continue microwaving for 1 more minute until the potatoes are fork-tender.
- Remove the potatoes from the microwave and slice them lengthwise.
