Classic recipe for Hot Water Cornbread

  1. In a mixing bowl, combine the cornmeal and salt.
  2. Gradually add the boiling water to the cornmeal mixture, stirring constantly until you have a thick, stiff dough.
  3. Allow the dough to cool slightly until it’s safe to handle.
  4. Divide the dough into small balls, about the size of a golf ball, and flatten them slightly into patties.
  5. In a skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot but not smoking.
  6. Carefully add the cornbread patties to the hot oil, working in batches if necessary to avoid overcrowding the skillet.
  7. Fry the cornbread patties for 2-3 minutes on each side, or until golden brown and crispy.
