Tip 1Cook bacon on rimmed sheet pan, until slightly less crispy than you’d prefer. Drain on paper towels, then store in resealable food-storage plastic bag in refrigerator up to 4 days. When ready to use, cut bacon strips in half with kitchen scissors, then reheat on a piece of foil in toaster oven or on pan in oven. Or place on a plate, and microwave until warm.

Tip 2Looking for a quick substitute for the bacon? Try Canadian bacon. This smoked meat, which is closer to ham, is precooked so you just need to heat it and add it to your breakfast sandwich.

Tip 3Crumble a piece or two of crisply cooked bacon and sprinkle on top of the breakfast sandwiches before serving to give them an extra special finish.
