Instructions:

  1. Line a 9-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a heavy-bottomed saucepan, combine sugar, butter, evaporated milk, and salt over medium heat. Stir continuously until the mixture comes to a boil.
  3. Once boiling, continue stirring and let it boil for 4-5 minutes, making sure to reach the soft-ball stage (about 234°F or 112°C on a candy thermometer).
  4. Remove the saucepan from heat and add vanilla extract, chocolate chips, and nuts (if using). Stir vigorously until the chocolate is fully melted and the mixture is smooth.
  5. Pour the fudge into the prepared pan, spreading it evenly.
  6. Allow the fudge to cool at room temperature until set. This may take a few hours.
  7. Once set, lift the fudge out of the pan using the parchment paper overhang, and place it on a cutting board.
  8. Cut the fudge into squares and store in an airtight container at room temperature.
