Instructions:
Preheat oven to 350°F. Soak potato slices in cold water to remove starch. You can prepare this a few hours ahead.
In a skillet, melt 4 tbsp butter and 4 tbsp olive oil on medium-high heat. Add onions, cooking till caramelized. Sprinkle flour over onions.
Add chicken stock and milk, stirring till it thickens. Season, then stir in cheese and chives. Remove from heat after cheese melts.
Grease a casserole dish. Drain potatoes and layer them, followed by the cheese sauce. Repeat.
Bake for 20 minutes.
For the pork chops: Mix flour, garlic, salt, and pepper. Coat each pork chop. In a skillet, heat 2 tbsp butter and 3 tbsp olive oil on medium-high heat. Brown the pork chops (4-5 mins/side).
Place pork chops over the potatoes and bake for 40 mins until bubbly and golden.
Optional: Garnish with extra chives.
