CHEESY CHICKEN FRITTERS

  • 1/3 cup mayonnaise
  • 1 garlic clove (pressed)
  • 1/2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper

How to Prepare:

  1. Prep Chicken: Dice the chicken breasts into 1/3″ thick pieces. (Tip: Slicing is easier if the chicken is partially frozen).
  2. Mix: In a large bowl, combine chicken with eggs, mayonnaise, flour, mozzarella, dill, salt, and pepper. Mix well. Refrigerate the mixture for at least 2 hours.
  3. Cook Fritters: Heat oil in a non-stick pan over medium heat. Drop heaping tablespoons of the chicken mix into the pan, flattening slightly. Cook each side for 3-4 minutes or until golden brown and fully cooked inside.
  4. Aioli Dip: Mix all aioli ingredients until smooth.

Note: Ensure the chicken is fully white inside before serving. Adjust heat if fritters brown too quickly.
