EASY MEXICAN CASSEROLE

Pressed for time but craving something delicious for dinner? This Easy Mexican Casserole is a perfect choice, combining lean ground beef, flavorful ranch-style beans, and crunchy tortilla chips, all topped with melted cheese, creamy chicken, and a dollop of sour cream.
I’ve always had a penchant for homemade Mexican cuisine, often opting for enchiladas. However, I decided to mix things up with this casserole—it’s a delightful twist on our typical Mexican dinner nights.

You’ll need these ingredients:

1 pound of lean ground beef
1 can of Ranch Style beans
1 bag (10-12 ounces) of tortilla chips, crushed
1 can of Ro-tel tomatoes

Here’s how to whip up the Easy Mexican Casserole:

Step 1:

Start by heating your oven to 325°F.

Step 2:

Use a sizable skillet to brown the ground beef, then drain any excess fat. Combine the beans, Ro-tel tomatoes, chopped onion, taco seasoning, chicken soup, and water with the meat. Let this mixture simmer on medium-low heat until it’s thoroughly combined and warmed.

Step 3:

Take a 9×13-inch casserole dish and lightly grease it. Create a base layer with the crushed tortilla chips. Over the chips, spread a layer of the beef and bean mixture, then sprinkle half of the cheddar cheese. Repeat these layers once more. Cover the dish with foil and place it in the oven. CRISPY FRIED SHRIMP

Classic, Crispy Fried Shrimp is so much easier to make at home than you think. Just a few, simple pantry ingredients and you’re on your way to fried perfection.

Ingredients

Canola oil for frying
24 ounces large raw shrimp, peeled and deveined
Egg Wash
2 large eggs
1 cup buttermilk (or milk)
1/2 tsp. kosher salt
1/2 tsp. black pepper
Batter
1 1/2 cups all-purpose flour
1 cup cornmeal
2 tsp. kosher salt
1/2 tsp. black pepper
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. cayenne pepper
Dipping Sauce:
3/4 cup mayo
1/2 cup sweet chili sauce

How To Make Crispy Fried Shrimp

Heat 1/2-inch of oil in a large, heavy-bottomed skillet over medium heat. Line a large plate with a paper towel, set aside.
In a cake pan or pie plate whisk together eggs and buttermilk. Add 1/2 teaspoon of salt and pepper.
In another cake pan, mix together the flour, cornmeal, salt, pepper, garlic powder, onion powder, and cayenne pepper.
Add shrimp to the egg mixture and coat well. A few at a time, add the shrimp to the flour and coat completely. Place on a clean plate while you bread the remaining shrimp.
Add shrimp to skillet making sure not to overcrowd the pan. Fry for 3 minutes, until crispy and golden brown. Drain on prepared plate. Continue until all shrimp is fried.
Dipping Sauce
Mix mayo and sweet chili sauce in a bowl for dipping.

Notes

Breading the shrimp with less mess:
First, when you set up your little breading station you’ll want two pie plates or cake pans ideally. You can use bowls if necessary but the wide, shallow shape of pie or cake pans makes the process much easier.

One cake pan will have the liquid ingredients, in this case, an egg and buttermilk. The second pan will hold the dry ingredients, flour, cornmeal and spices for a major flavor punch.

Use one hand (I usually use my left since I move through the process left to right) to coat the shrimp in the egg mixture. Pick up the shrimp with the wet hand and place it in the flour mixture. Now use your other hand to gently coat the shrimp.

Because you aren’t going back and forth with both hands they aren’t getting goopy and gross. One hand will have egg and one hand flour but not a big lumpy mess.

Ribeye steak

Ribeye steak – Don’t LOSE this recipe

Ingredients

1 rib steak
Sea salt flakes
Freshly ground black pepper
50g butter

2 sprigs of thyme

1 clove of crushed garlic with its skin

Directions

Take the steak out of the refrigerator at least half an hour before cooking it until it reaches room temperature. This is an important step in ensuring that the steaks are cooked evenly.

When ready to cook, generously season the steak. Sprinkle with lots of salt and pepper on both sides, and set on top to get an even coverage.

Heat a frying pan. If you are cooking two slices of steak, make sure the pan is large enough to fit the slices comfortably. Otherwise, use two pans and heat them simultaneously. Add the steak to the skillet and cook over medium-high heat for 2 to 3 minutes on each side (depending on the desired thickness and degree). As a guideline, a 3cm steak should be cooked after 5 minutes. If you have a meat thermometer, the indoor temperature should be 50 ° C for rarity, 60 ° C for average and 70 ° C for good cooking.

After turning the steak for the first time, add the butter, thyme and garlic and stir for one minute. To do this, tilt the pan towards you until the butter collects at the bottom of the pan, then pour the butter over the steak repeatedly.

Removing steak from skillet & permit it rest for 5 min . Don’t be tempt to skip this step, it is esentiel . During the cooking process, the meat particles stick together, so if you cut the steaks right after cooking, all the juices on the board will run out. The rest time allows the particles to relax and reabsorb their fluids, which means you won’t lose those delicious juices when slicing.

Cut the steaks into strips, season and serve with your choice of side dishes and sauce.
