Ingredients:

  • 1 ½ cups plus 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp salt
  • ½ tsp vanilla
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

Lemon Glaze/Syrup:

2 to 3 tbsp lemon juice

1 cup sifted confectioner’s sugar

How To Make Lemon Blueberry Loaf:

Preheat the oven to 350°F.

Grease the sides and bottom of a loaf pan.

Sift together all dry ingredients for the bread.

In a large bowl, thoroughly mix together all the moist ingredients.

Slowly incorporate the dry ingredients into the wet mixture.

In a separate bowl, gently fold the tablespoon of flour into the blueberries, then add them to the batter.

Pour the batter into the prepared pan.

Bake for 50 to 55 minutes. The bread is done when a toothpick comes out clean.

Remove from the oven and allow it to cool for 10 minutes.

Take the loaf out of the pan and let it cool further on a cooling rack.

In a small saucepan on low heat, dissolve the powdered sugar in the lemon juice, simmering for 3 minutes.

Using a toothpick, poke holes all over the loaf, including the top and sides.

Use a pastry brush to generously apply the lemon syrup on the top and sides.

Let it harden for 15 minutes before serving.

– 1 small shredded head of cabbage.

– 2 peeled and sliced carrots.

– 2 celery stalks, chopped.

– One diced onion.

– 1 Can.Of (14.5 oz) diced tomatoes.

– 8 Cups.Of vegetable or chicken broth.

– 1 Tsp.Of dried thyme.

– 1 Tsp.Of dried oregano.

– Salt and black pepper to taste.

– 2 Tbsp.Of olive oil.

– Fresh parsley for garnish (optional).

DIRECTIONS:

1st Step

Melt the olive oil in a large soup pot over medium heat. Add the chopped celery, diced carrots, minced garlic, and diced onion. Sauté the veggies for approximately 5 minutes, or until they begin to soften.

2nd Step

Add the minced dry thyme, dried oregano, and cabbage. Cook the cabbage for a further five minutes, letting it slightly wilt.

3rd Step

Place the chopped tomatoes in the saucepan together with their juice, then add the vegetable or chicken broth. To thoroughly incorporate all the ingredients, stir well.

4th Step

Bring the soup to a boil before lowering the heat. For approximately 20 to 25 minutes, or until the veggies are soft, cover the saucepan and boil it.

5th Step

To taste, season the cabbage soup with salt and black pepper. As necessary, adjust the seasoning. Pour the heated soup into bowls and, if preferred, top with fresh parsley.

Ingredients

2 lbs Stew Beef (cut in cubes)
2 tsp Olive Oil
2 Cups Water
1 Tbs Worcestershire Sauce
1 tsp garlic powder or 1 fresh clove garlic minced
2 Bay leaves
1 medium onion chopped
1 tsp salt
1 tsp raw sugar
½ tsp ground black pepper
½ tsp smoked paprika
½ tsp tumeric
½ tsp onion powder
⅛ tsp ground cloves
4 large carrots quartered and cut into small pie shaped pieces
3 celery stalks halved and cut into small pieces
2 Tbs corn starch
¼ cup water
1 packet of Hidden Valley Ranch dressing mix

Preparation

Brown meat in the olive oil in a skillet on the stove top over medium high heat for 2-3 minutes. Place into crock pot.
Add the 2 cups of water water and all ingredients to the crock pot. Cook in crock pot on low for 8 hours or on high for 4 hours.

45 minutes before serving, in a small bowl mix ¼ cup of cold water and 2 tbs of corn starch together and mix until corn starch is dissolved. Once dissolved, add to the crock pot. Add the packet of Hidden Valley Ranch dressing mix as well.

INGREDIENTS :

  • 2 teaspoons olive oil
  • 12 ounces pkg smoked sausage
  • 1 1/4 c. white rice
  • 1/2 yellow bell pepper – sliced
  • 1/2 red bell pepper – sliced
  • 4 cloves garlic – minced
  • 1 1/4 c. low-sodium chicken broth – divided
  • 5 tablespoons tomato paste
  • 1 small white onion – quartered and sliced
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 tablespoons parsley – chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon kosher sea salt
  • 1/2 teaspoon ground black pepper

DIRECTIONS :

Step 1: Following the package directions, cook the rice in a small saucepan.

Step 2: Drizzle the oil in a hot large cast-iron skillet over medium-high. Add the sausage to the skillet once the oil starts shimmering and cook for about 5 minutes on all sides until browned. When done, set the sausage aside.

Step 3: To the same skillet, add the peppers and onions. Saute for about 4 to 5 minutes before adding in the garlic, salt, and pepper. Continue to cook for a minute more until fragrant. When done, set the peppers and onions aside with the sausage.

Step 4: Now, add the tomato paste to the now-empty pan along with ¾ cup of chicken broth. Stir well and let everything simmer for about a minute. Add the paprika and cayenne, then add the cooked rice, sausage, the rest of the chicken broth, pepper, and onions. Stir well until mixed.

Step 5: Serve the sausage and rice skillet right away when done garnished with some chopped parsley. Enjoy!

This Cowboy Quiche never fails to make our family dinner extra special! Bacon, caramelized onions, and a lot of cheese, it doesn’t get any better than that!

INGREDIENTS :

  • 8 slices bacon, chopped
  • 8 large Eggs
  • 2 medium yellow onions, sliced
  • ¼ tsp black pepper
  • 1 ½ c heavy cream or half-and-half
  • 2 c grated cheddar cheese
  • 2 tbsp salted butter
  • ¾ tsp salt
  • 1 unbaked pie crust

DIRECTIONS :

  1. Prepare the oven and preheat it to 200 degrees C or 400 degrees F.
  2. Roll out the pie crust, then place it into a deep-dish pie plate. Press the sides of the crust to the plate. Put it in the fridge while you prepare the rest of the ingredients.
  3. Place a large skillet on the stove and turn the heat to medium-low. Add butter and allow it to melt.
  4. Add the onions into the hot skillet, then sauté for about 20 minutes or until they turn golden brown. Remove from the skillet and transfer them into a mixing bowl.
  5. In the same skillet over medium-high heat, add the bacon slices and cook for a few minutes until crispy. Transfer them onto a clean plate lined with paper towels to drain excess grease. Move it into the bowl with the onions.
  6. Add eggs, salt, pepper, and cream into a mixing bowl. Beat until well blended. Transfer the mixture into the bowl with the caramelized onions and bacon. Add the grated cheese as well and stir everything until well combined.
  7. Transfer the mixture to the prepared crust and spread it evenly. Cover with foil.
  8. Place it in the preheated oven and bake for about 45 minutes. Remove the cover and bake for 15 more minutes or until the top turns golden brown.
  9. Remove the quiche from the oven and allow it to rest for about 15 minutes at room temperature. Slice into even servings.
  10. Serve and enjoy!

Notes:

  • Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 days or 3 months in the freezer. Reheat for a few minutes before serving again.

Ingredients

2 cups of dry Macaroni
6 oz. Claw Crab Meat
8 oz. Shrimp, peeled and deveined
8 oz. Sour Cream
4 Tablespoons Butter
2 Tablespoons Flour
1 Spring Onion
1 can Evaporated Milk
8 oz. block Sharp White Cheddar Cheese
4 oz. block Mozzarella Cheese
¼ cup Panko Bread Crumbs
Salt, Black Pepper, to taste

Directions

Preheat oven to 350°.
Peel and de-vein shrimp if needed.
Cook the macaroni according to package directions. Drain well.
Place drained macaroni in a large mixing bowl.
Add the sour cream, stir together well, until all noodles are coated.
Add the crab meat, stir well.
Finely chop the green onion. Set Aside.
Grate the white cheddar cheese. Set aside.
Grate the mozzarella cheese. Set aside.
Melt the butter in a medium saucepan, or skillet.
Add the shrimp. Turn and stir shrimp until lightly done.

Remove shrimp from pan. Chop slightly when cooled. Add to the macaroni mixture.
