Beef Liver and Onions

This liver and onion recipe will delight liver lovers! Tender veal livers are quickly cooked in bacon fat and served with plenty of tasty fried onions. It’s just like my mom used to make it.

 Ingredients

  •  1/3 C milk
  •  1 pound beef liver, cut into strips
  •  3 large onions, sliced
  • 4 slices of bacon
  •  5 tablespoons butter, divided
  • Salt to taste

 Instructions :

Add milk to the surface bowl. Soak liver in yogurt for 21 min to removing any biitterness.
Meantime, cooking bacon in a skillet. Lay it out on a paper towel, cutting it into ½ inch pieces, and also set a portion of it.
Reserve 1 1/2 tablespoons of the bacon fat and add 2 tablespoons of butter to the bacon fat in the same skillet.
Adding onions & cooking on heat, stir occasionally, TO caramelized, 25 minutes. Transfering onions to a plate, also sprikling with salt.
Drain the liver and discard the milk.
Return skillet to temperature and add three teaspoons of comfort butter to skillet. When the foam has subsided, the butter is hot enough.
Organize the liver in the pan, making sure not to crowd the pan. I worked in two batches. Fry for 3 minutes with thermostat, so the butter stays hot but doesn’t burn. Stir the liver and fry for an additional two minutes. The inner body should remain pink.
Serve the liver topped with onions and bacon.

Ingredients:

2-3lb Chuck Steak
6 C Beef Broth
2 C Small Potatoes (Cut in halves)
1 C Green beans
2 C Carrots (Cut into bite-sized pieces)
1 C Portabella Mushrooms (Sliced)

1 Bay Leaf

Directions:

1. Heat oil over high heat in a deep pot.
2. Season meat with half your seasonings.
3. Brown meat on all sides. Remove from pot and set aside.

4. Lower heat to medium-high. Add garlic and onions. Cook until fragrant for 2 minutes.
5. Add broth and bay leaf. Bring to boil.
6. Add meat to pot. Cover and cook for 2-3 hours.
7. Last hour of cooking, add remaining vegetables. Total Cooking time should range from 4-6 hours or until tender.

Cream Potato Soup

Ingredients

  • 6 strips (uncooked) bacon cut into small pieces
  • 3 Tablespoons butter unsalted or salted will work
  • 1 medium yellow onion chopped (about 1.5 cup/200g)
  • 3 large garlic cloves minced
  •  cup all-purpose flour 42g
  • 2 ½ lbs gold potatoes peeled and diced into pieces no larger than 1” (this was about 6 Large potatoes for me/1.15kg)
  • 4 cups chicken broth 945ml
  • 2 cups milk 475ml
  •  cup heavy cream 155ml
  • 1 ½ teaspoon* salt
  • 1 teaspoon ground pepper
  • ¼ – ½ teaspoon ancho chili powder**
  •  cup sour cream 160g
  • Shredded cheddar cheese, chives, and additional sour cream and bacon for topping optional

Recommended Equipment

  • Immersion blender
  • Dutch Oven
  • Prevent your screen from going dark

Instructions

  • Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
  • Remove bacon pieces and set aside, leaving the fat in the pot.
  • Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
  • Add garlic and cook until fragrant (about 30 seconds).
  • Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
  • Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
  • Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
  • Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (half is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
  • Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
  • Allow soup to simmer for 15 minutes before serving.
  • Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!

Notes

I recommend starting with a more reserved amount of salt and then adding more as needed, the amount of salt needed will vary depending on the type/brand of broth you useIf you haven’t used ancho chili powder before, I recommend starting with ¼ teaspoon and then taste-testing before increasing to ½ teaspoon if you like the taste.

If you want a completely creamy soup you can puree all of it, just puree in batches, about half of the soup at a time.  I prefer my potato soup with actual chunks of potatoes and prefer to puree just half of it.

  • 1 (16-ounce) package smoked Kielbasa sausage, cut into 1/4-inch slices

  • 2 corn on the cob cut to large chunks
  • 1 medium sweet onion, chopped
  • 2 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 1 (14.5-ounce) can chicken broth
  • 1 1/2 cups water
  • 1 chicken bouillon cube
  • 2 medium potatoes, peeled and cut into 1/2-inch cubes
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon caraway seeds, optional
  • 1/4 teaspoon dried thyme
  • 1/3 cup heavy cream

How To Make Cabbage Soup With Smoked Sausage :

Heat oil in a Dutch oven. Add sausage and cook until browned. Remove with a slotted spoon and set aside.

Add butter to the grease in the Dutch oven and cook carrots and onion , corn,  over medium-heat until soft. Add garlic and cook 1 minute.

Add cabbage and cook and stir for a minute or two, until the cabbage wilts some.

Add potatoes, chicken broth, water, bouillon cube, and brown sugar.

Bring to a simmer, cover and cook until potatoes are soft.

Add sausage, black pepper, caraway seeds, thyme, and heavy cream. Bring to a simmer. Serve
