Apple butters are lower in sugar than traditional jams and, once opened, they need to be kept in the fridge. Cooking the apples in cider brings a delightful sparkle to the butter, the flavour of which will vary depending on the type of cider used (pick one you enjoy drinking).

Ingredients:

  • 1kg/2lb 4oz cooking apples, plus a few extra if using windfalls, no need to peel or core
  • 500ml/18fl oz cider
  • 400–500g/14oz–1lb 2oz granulated sugar
  • ½ tsp ground cloves
  • ½ tsp ground cinnamon

Method:

  3. Combine the reserved cheddar, bacon, jalapenos, and green onions in a small zipper storage bag and store it in the refrigerator.
  4. Lay out a generous piece of plastic wrap on your countertop. Spoon the cheese mixture onto it and start shaping it into a ball by using the plastic wrap. Wrap the cheese ball securely and refrigerate it overnight.
  5. Approximately 20 minutes before serving, remove the cheese ball from the refrigerator. On a cutting board or large plate, spread out the reserved cheddar, bacon, jalapenos, and green onions. Unwrap the cheese ball and roll it in the reserved toppings for that irresistible finishing touch.

    • 2 cans of dark red kidney beans, including the liquid
    • 2 cans of whole kernel corn, including the liquid
    • 2 cans of diced tomatoes, including the juice
    • Salt and freshly ground black pepper to taste

Instructions:

In a spacious pot, heat and crumble the ground beef over medium-high heat until it’s no longer pink. Drain any excess grease if necessary.

Now, let’s build the layers of flavors:

Begin with a layer of thinly sliced or cubed potatoes.

Next, sprinkle the finely chopped onions evenly.

Add the chopped celery to create a fresh and crunchy layer.

Now, gently pour in the cans of dark red kidney beans, ensuring you include the flavorful liquid.

Follow up with the cans of whole kernel corn, including their tasty juices.

Lastly, incorporate the cans of diced tomatoes with all the rich juices they hold. Don’t forget to season with salt and pepper to your liking.

There is no icing, no special molds and thanks to the liquid that is poured onto the cake after making the holes, they always remain soft and aromatic. This particular poke cake has one of my favorite flavors: butterscotch. Then we sprinkle everything with butterscotch, another favorite. There’s nothing better than toffee.

When I went to the supermarket to pick up a few ingredients, my heart sank when I reached the additives section. They didn’t come from my usual caramel ice cream syrup.

I had two options, one was artificially seasoned and I didn’t like it. So my only other option is a bourbon butterscotch topping.

I honestly didn’t think I would like it so much.But I liked them even better than the other varieties I usually buy! If you want to add depth and flavor to this (already) amazing cake, there is a way to do it. This coincidence turned out to be a wonderful addition to this recipe for me. If you have a bourbon butterscotch syrup option at your grocery store, I highly recommend this substitute.
