Extra Creamy Slow Cooker Cheeseburger Soup

Sometimes, all our souls yearn for is a bowl brimming with a rich, creamy soup that not only warms our insides but also brings a gentle, comforting hug to our senses. While a classic chicken noodle soup offers a nostalgic embrace, today we embark on a journey to a realm of utter decadence and profound flavors: a lusciously indulgent slow cooker cheeseburger soup.

Oh, but this isn’t just any cheeseburger soup. We’ve revisited, refined, and elevated an old favorite, paying meticulous attention to one ingredient that dramatically alters the landscape of this dish.

An Ode to Smoothness: Velveeta

In our previous version, cheddar was the star. But this time, we sought an impeccably smooth, seamless base, leading us to opt for the somewhat debated, Velveeta cheese. Its inclusion promises a broth that’s undeniably smooth and devoid of stringy cheese bits or segregating milk fats. If Velveeta isn’t your favorite, by all means, choose a cheese that makes your heart sing – though we whisper the secret: Velveeta does spellbinding wonders for the soup’s consistency.

Achieving Thickness with a Roux

Alongside Velveeta, a crafted roux introduces the desired thickness that elevates this soup from delightful to divine. This meld of butter, flour, and milk is introduced towards the end, and is unequivocally non-negotiable for achieving that irresistible yumminess.

With cheese and beef as our heroes, and a supportive cast of carrots, celery, and onion, what unfolds is a symphony of depth and rounded flavor that culminates in a soul-soothing culinary masterpiece.

Cheesy Mississippi Mud Potatoes

What are Mississippi Mud Potatoes, you ask? Well, that’s easy. They’re diced potatoes that are mixed up with a few goodies and baked until they’re tender throughout, crispy on top, and totally surrounded with creamy cheesiness. Why are they called Mississippi Mud Potatoes? Well, that I don’t really have an answer for. But their vague history isn’t something you need to concern yourself with; all you need to know is that they’re the ultimate when it comes to comforting side dishes.
These start with plenty of peeled, diced potatoes – about seven cups – that go into a casserole dish with some grated cheddar cheese, bacon, green onion, and garlic salt. That all gets mixed together with some mayo, which brings everything together and lends plenty of creaminess…
And then it bakes low and slow. They go in at 325°F, so it’s not too low, but it is low enough that the potatoes can hang out for a long while until they get irresistibly tender but still come out with a nice browned topping.

Quick Homemade Italian Tomato Sauce

Who can resist a superb tomato sauce, especially one bursting with genuine Italian flair? Our enthusiasm for this sauce recipe knows no bounds, not just for its scrumptiousness, but also for its swift cooking time.

While we adore slow-cooked sauces that gently simmer throughout a lazy weekend afternoon, this quick concoction also finds its place during the hectic weekdays, promising a flavor that rivals any store-bought jar.

A dash of sugar to our sauce negates the dominating acidity from the tomatoes, striking a delightful balance in taste. Although it’s heavenly atop a bed of spaghetti, this sauce doubles as a sumptuous dip – imagine it with warm slices of garlic bread! Typically, we whip up a double batch, securing a stash in the freezer for future pasta nights. While it’s tempting to simply grab a jar from the store, this recipe will unveil the simplicity behind homemade pasta sauce.
