Before I became vegan, I used to love chocolate mousse. So I tried different plant-based versions with silken tofu and avocado, but this one is by far my favorite!

I’ve made this recipe so many times and it’s always a real winner. Nobody will notice it’s completely vegan!

The main ingredient for this recipe is aquafaba. I’ve you haven’t heard of aquafaba yet, you should really give it a try! It’s a magical ingredient in the vegan kitchen.

It’s the perfect plant-based subsitute for egg white and it can be whipped up perfectly. It’s also a great binder for vegan baked goods. And don’t worry, you can’t taste the chickpeas at all!

Then divide everything between four glasses and place it in the fridge overnight to set. It will be so fluffy, chocolatey, and perfectly sweet.

Ingredients:

A comforting vegetable stew is all I need on a cool winter day (despite that it never gets cold where I live, haha). But it can also get pretty “chilly” in the tropics (sometimes as low as 70 degrees Fahrenheit). I know this isn’t cold at all for most of you, however, if you are freezing right now, then make a bowl of this simple vegetable soup. 😀

Ingredients:

  • 1 tbspoil
  • 1 mediumwhite onion diced
  • 3 medium(200 g) carrots diced
  • 5 small(500 g) potatoes chopped
  • 1 medium(70 g) stalk celery with greens, finely sliced
  • 3garlic cloves minced
  • 1/2 to 1 tbspfresh thyme or 1 tsp dried (see notes)
  • 1/2 to 1 tbspfresh rosemary or 1 tsp dried
  • 1/2 to 1 tbspfresh oregano or 1 tsp dried
  • 1 1/2 tspsea salt or to taste

Ingredients:

  •  cups sugar
  • 3 Tablespoons flour
  • Three eggs
  • 1 cup buttermilk
  • ½ cup buttermilk melted
  • 1 Tablespoon lemon zest loosely placed in the spoon
  • 3 Tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 prepared pastry crust

Instructions:

  • Preheat oven to 350 degrees F.
  • In a bowl, combine your sugar and flour. Set aside.
  • In a separate bowl, combine your eggs, buttermilk, butter, lemon zest, and lemon juice.
  • Pour your wet ingredients into your flour and sugar bowl. Stir until just combined.
  • Pour into pie shell.
  • Cover the edge of your crust with foil to prevent burning.

Philly Cheesesteak Egg Roll

Ingredients:

  • Butter – 1 ½ tbsp.
  • Green bell pepper chopped – 1
  • Onion chopped – ½ cup
  • Boneless rib-eye steak sliced or chopped – 1 pound
  • Salt

  • Provolone cheese – 6 slices
  • Egg roll wrappers – 12
  • Oil for frying
  • Optional: Ranch for dipping

  • Take a large pan and put it on medium flame. Use half of the butter (half the quantity described in the ingredient list) and melt it. After the butter is melted, add green bell pepper and chopped onion. Cook these ingredients for three to four minutes or until softened.
