Strawberry Cheesecake Bars

Ingredients:

Crust

2 cups graham cracker crumbs

2 tablespoons granulated sugar

4 tablespoons salted butter melted

Cheesecake
16 ounces cream cheese softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Strawberry Filling
3 cups chopped strawberries

2 tablespoons lemon juice

½ cup light brown sugar packed

1 teaspoon vanilla extract

1½ tablespoons cornstarch

Oatmeal Crumble
1 cup old fashioned oats

1 cup light brown sugar packed

¼ teaspoon salt

½ teaspoon ground cinnamon

6 tablespoons unsalted butter cold and finely diced

Directions:

Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper and set aside.

Combine graham cracker crumbs and sugar in a medium bowl and make a small well. Pour the melted butter in the well and mix until evenly combined.

Transfer the crust mixture to the prepared baking pan and gently press the mixture evenly into the bottom of the pan. Bake for 8 minutes.

While the crust is baking, beat together the cheesecake ingredients in a medium bowl until smooth and creamy and set aside.

Add the strawberries, lemon juice, and vanilla to a medium saucepan and cook over medium-high heat for 5 to 7 minutes until the strawberries are bursting and juice has started to form.

In a separate bowl, combine the brown sugar and cornstarch. Then stir it into the strawberry mixture and cook for an additional 2 minutes, stirring constantly. Once the mixture has thickened and resembles pie filling, remove from heat.

Make the oatmeal crumble by combining all of the ingredients in a large bowl and use a pastry cutter or your fingers to mix the ingredients together, squishing the cubes of butter and creating a coarse crumble.

Pour the cheesecake mixture over the baked crust and spread out evenly. Top the cheesecake mixture with the strawberry sauce. Top the strawberries with the crumble topping.

Bake the cheesecake bars for 50 to 70 minutes, until the top of the crumble is golden brown. Remove from the oven and let cool in pan on a wire rack for 30 to 60 minutes. Transfer to the refrigerator to cool for at least 4 hours, preferably overnight, before slicing into squares.

Apple Cinnamon Chimichangas

Chimichangas for dessert? Swap out the traditional savory filling of rice, beans, and meat for sweet apple pie filling, then roll the deep-fried bundles in cinnamon sugar and drizzle with honey if desired.

Ingredients

  • 1 (21 ounce) can apple pie filling
  • 1/2 cup cinnamon sugar
  • 15 (6 inch) flour tortillas
  • oil for frying

Directions

Heat apple pie filling in a small pot over medium-low heat until warmed through, about 5 minutes.
Place cinnamon sugar in a shallow dish.
Spoon 1 1/2 tablespoons of filling onto each tortilla. Fold in opposing edges and roll up as you would a burrito.
Heat oil in a large, deep saucepan over medium heat.
Place a batch of rolled tortillas seam-side down in the hot oil and fry until browned and crispy, 1 to 2 minutes. Turn and continue frying until all sides are browned, 1 to 2 minutes more. Roll in cinnamon sugar to coat. Repeat with remaining batches.

Review of some fans:

“I’ve been making these for 30 yrs.I use a 16 oz. can of apple pie filling and 10 eight” flour tortillas.I warm them in the microwave for about 5 seconds to make them pliable and lay them all out -dividing apples equally.Roll up like burritos, quickly.I have a cookie sheet (lined /w/ paper towels) and fry 2 at a time. While still hot-dust with powdered sugar. This whole process takes about 15 min.I first began making this when our circle of 5 families would go out many miles away for our annual woodcutting. Each family (legally) needed a cord of wood.So everyone worked all day for the weekend and I made these (I call them Flautas) for extra calories.Easily 4 batches in an hour to take.It got to be a tradition and now too old to go cutting.Everyone still wants them for Christmas-we love making them and the grand kids know how to.Thought I’d share.”

Sweet Potato Pie

-Wonderful!! I skipped the glaze; my sweet tooth is pretty easily satisfied, I was afraid it would be too sweet for me with the glaze. This pie is incredible. Used the first recipe for the sweet potatoes, I can’t understand why anyone would alter the recipe or give it less than 5 stars.

-I have an almost exact recipe for sweet potato pie given to me by a southern friend of mine. She use buttermilk instead of evaporated.Has any one tried this? How is the taste different? She said if you want it creamy,to put the potatoes in a food processor. Please advice before I attempt this.

-This is a good recipe – I make sweet potato pies all the time. The only thing I would add is to the strain the potatoes first. I don’t like lumps or strings in my pie and by straining my potatoes first I get a very smooth pulp and pie. I also add a little cinnamon and nutmeg to my recipe.

Ingredients:

2 c sweet potatoes, cooked and mashed (about 3)
1 1/2 c sugar
2 Tbsp flour
1 can(s) evaporated milk (5 oz), divided
1 egg, slightly beaten
1 tsp vanilla
1 9″ pie crust, unbaked
Glaze
1/2 c sugar
2 1/4 tsp flour
2 Tbsp butter, melted
2 Tbsp evaporated milk (from the above can)
1/4 c pecan halves, optional

Directions:

1. Preheat oven to 375 degrees. Put the unbaked pie crust on a cookie sheet.
2. In a bowl, combine the sugar, flour, milk (set aside 2 Tablespoons for use in Glaze), egg and vanilla.
3. Stir in the sweet potatoes. Pour into the pie shell.
4. For the Glaze, combine the sugar, flour, butter and 2 Tablespoons milk. Drizzle over the sweet potato mixture, but don’t overdue it! If desired, garnish with the pecan halves.
5. Bake for 1 hour or until crust is golden brown and a knife inserted near the center comes out clean.
6. Tip: Sometimes I do not even use the Glaze; especially if I use the left-overs from the Sweet Potato Wedges. It can get a little too sweet!

The BEST homemade German Chocolate Cake

The BEST homemade German Chocolate Cake with layers of coconut pecan frosting and chocolate frosting. This cake is incredible!

I think the hundreds of reviews of this recipe speak for themselves, but let me add my own testament that this German Chocolate Cake is THE CAKE that every person in my family requested for their birthday growing up. I was super lucky, being a twin, because my mom would make both of our favorites: German chocolate cake for my sister, and carrot cake for me!

What is German Chocolate Cake?

The name German chocolate cake is a little deceiving as it is not actually a German dessert and traditionally the cake is a lighter colored cake with a mild chocolate taste and the entire cake is usually covered in coconut pecan frosting.  My family’s version is this chocolate cake with chocolate frosting covering the cake and coconut frosting on top and in the center of the cake. This cake seriously can’t be beat, especially if you’re a chocolate lover!

How to Make German Chocolate Cake:

1. Make the chocolate cake: Combine dry ingredients (sugar, flour, cocoa, baking powder, baking soda and salt). Combine wet ingredients (eggs, buttermilk, oil and vanilla). Mix together and stir in boiling water.

2. Bake at 375°F: Pour batter into prepared 8 or 9-inch round baking pans. I like to cut a round piece of wax or parchment paper for the bottom of the pan also, to make sure the cake comes out easily.

3. Make the German Chocolate Frosting: Combine brown sugar, granulated sugar, butter, egg yolks, and evaporated milk in a saucepan and bring the mixture to a low boil over medium heat. Stir constantly until the mixture thickens.  Remove from heat and stir in vanilla, nuts and coconut. Allow to cool completely before layering it on the cake.

4. Make chocolate frosting:  Melt butter, stir in cocoa powder, slowly add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed to thin the frosting, or a little extra powder, until you reach your desired consistency. Stir in vanilla.

5. Assemble: Place one of the cake rounds on your serving stand or plate.  Smooth a thin layer of chocolate frosting over the cake layer, and then spoon half of the coconut frosting on top, spreading it into a smooth layer. Leave about ½ inch between the filling and edge of cake.  Stack the second cake round on top. Smooth chocolate frosting over the entire cake.  Spoon remaining coconut frosting on top of the cake.

Equipment

  • Cake Pans
  • Parchment Paper Rounds
