CROCK POT BBQ BEEF ROAST

We FINALLY had a weekend here in Ohio where it was semi-sunny and in the 60’s! Our “Spring” has been more like an extended winter, so it was amazing to actually have some Spring-like weather. Aside from just instantly lifting my mood, the warmer weather gave me a craving… for cookout food!

I’ve talked here on the blog before about my serious love of cookout or potluck food. It’s so amazing to me… like my warm weather comfort food! From jalapeño popper macaroni salad, broccoli salad, tequila lime coleslaw and fresh strawberry pie… I can never get enough. Usually we go for a more traditional pulled pork, but an absolute favorite in our family is our shredded beef barbecue!

This recipe is a mixture of one we got from my Aunt Amy, with some of my own flair, and a great tip from Karly who blogs over at Buns in My Oven. Want to know what the tip is? Mustard. Plain yellow mustard. The acidity adds amazing flavor and really tenderizes the beef as it cooks in the crockpot. Even if you’re skeptical… try it once!

Ingredient:

2 – 2 1/2 lb. beef chuck roast
1/4 C. BBQ sauce
1/4 C. ketchup
2 T. light brown sugar
1/4 C. apple cider vinegar
1/4 tsp. dry mustard
1 T. Worcestershire sauce
1/4 tsp. chili powder

Direction :

Place the roast in the crock pot, slice in half if using a 4 qt. crock pot. Whisk together the remaining ingredients and pour over the roast. Cook on low for 6 hours. Remove the roast and shred with two forks (it just falls apart), place in a serving dish and ladle some of the juice over the top before serving.

HOMEMADE KRISPY KREMES

Krispy Kreme Doughnut Recipe (Copycat) — Light and fluffy donuts topped with a rich glaze will melt in your mouth. Tastes as good as the store-bought Krispy Kremes!

Raise your hand if you have ever waited in line for a Krispy Kreme doughnut. Now, raise two hands if you’ve passed Krispy Kreme and had to make a U-Turn when you see the green neon sign say “HOT NOW”! I have to admit I’ve done both. Don’t feel guilty about it and I even got in trouble for it.

INGREDIENTS

3 tablespoons milk
3 tablespoons boiling water
1 teaspoon dry active yeast
8 ounces all-purpose flour ( a little under 2 cups, I recommend you measure and weigh. See my note above)
1 1/2 ounces sugar ( about 3 tablespoons)
1 egg
1 ounce butter, cold to room temperature
1 dash salt
oil
Glaze
1/3 cup butter
2 cups confectioners’ sugar
1 1/2 teaspoons vanilla
4 tablespoons hot water ( or as needed)

DIRECTIONS

In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).
In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.
Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.
Turn the dough out onto a lightly-floured counter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.
Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.
Cover the doughnuts holes with a cloth to rise while you heat the oil to 375°F.
Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.
Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage!

Slow Cooker Barbequed Beef Ribs

I bought pork ribs and went to prepare them for the slow cooker in the morning when I realized that I did not have BBQ sauce! I never made BBQ sauce from scratch.

It was VERY good! I doubled the recipe…and I added a teaspoon of cayenne pepper to give it a little spice with the sweetness. I would do as another poster said and omit the water. It was too liquid for me, I like a thicker sauce. Oh, I also added some honey. Its not too sweet at all. I would actually add more brown sugar next time, and honey, along with the cayenne pepper. This is a great base BBQ sauce to tweak however you like! I also broiled the ribs first like I always do. And I added a large onion to the crock pot. Cooked it on low for 7 hours and it was delish! =)”

“This recipe came out terrific. I seasoned the ribs with salt and pepper then seared them on all sides before adding them to the Slow Cooker. The searing made for a nice, caramelized crust on the outside of the ribs. Cooked these for 7 hours on Low. There was some grease so I simply absorbed it off the top using tongs and a paper towel. Super!”

1 cup water
1 cup ketchup
1 (6 ounce) can tomato paste
3/4 cup brown sugar
1/2 cup vinegar
2 tablespoons prepared mustard
1 tablespoon salt
2 pounds beef back ribs

Instructions:

  1. Combine water, ketchup, tomato paste, brown sugar, vinegar, mustard, and salt in a slow cooker; stir well to dissolve brown sugar and salt.

  2. Place short ribs into the sauce and stir to coat. Cover and cook until ribs are tender, about 8 hours on Low or 4 hours on High.

Easy HERSHEY’S SYRUP BROWNIES

Wonderful brownies! They are moist and flavorful. I baked them on a cookie sheet and they baked really quickly! The icing is great on top. Thanks for posting!

I am a fairly new baker, and the directions on this were not as explanatory as I needed! Everything turned out fine, but I didn’t realize the frosting would be so runny. I took the brownies out of the pan before putting on the frosting b/c i only wanted to do half. Next time I will definitely leave the brownies in the pan for that part. I think the frosting is necessary b/c the brownies themselves are not very sweet. I also used a 9″ x 13″ pan and baked a little while longer. They were very good, thanks!

o 1/2 cup butter ( no substitutes, melt in microwave)
o 1 cup granulated sugar
o 4 eggs
o 1 teaspoon vanilla extract
o 1 cup flour
o 1 (16 ounce) cans Hershey’s syrup
o 1 cup chopped nuts (optional)

Icing
o 3 cups confectioners’ sugar
o 1/2 cup butter, melted ( no subs)
o 4 tablespoons cocoa
o 4 tablespoons milk
o 1 teaspoon vanilla extract

1. Preheat oven to 350 degrees. Grease the bottom of a 10 by 15 inch pan
2. After melting butter in microwave, cream sugar and butter together. Add eggs, one at a time and beating well after each addition.
3. Add vanilla extract.
4. Add flour, mix well.
5. Add Hershey syrup, mix well.
6. Add chopped nuts, if using.
7. Pour batter into pan. Bake for 35-40 minutes or until brownies test done with a toothpick.
8. When the brownies are almost done baking, prepare icing.
9. Bring to boil in the microwave, the butter, cocoa and 1 T. milk.
10. In a mixing bowl, add confectioners’ sugar. Add the cocoa mixture to the sugar and beat well. Add 1 t. vanilla extract. Add the rest of the milk. Add enough to get the desired spreading consistency.
11. Let brownies cool about 5-10 minutes. Spread icing on brownies. Sprinkle with some more chopped nuts, if desired. The icing will harden to a fudge-like consistency.
12. Let brownies cool completely before cutting into squares.

1 (3 ounce) package strawberry Jell-O gelatin dessert
1 tablespoon lemon juice
1 cup water

DIRECTIONS:

Combine in medium saucepan 1/2 cup of sugar, cornstarch, Jello, lemon juice, and water.
Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
Set aside to cool slightly.
Stir in sliced strawberries.
Tear angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip.
Press into 9×13 inch pan (I use glass so you can see the pretty layers).
Set aside.
Combine cream cheese, 1/2 cup remaining sugar, and vanilla in mixer bowl.
Beat until smooth.
Stir in remaining Cool Whip.
Spread evenly over cake layer.
Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly.
Refrigerate 2 to 3 hours before serving.
Note: You may substitute a 16 ounce bag of frozen whole strawberries, thawed and chopped, for the fresh strawberries.
