How To Make My Mom’s Fudge

Fudge was always a treat when we were growing up. It was saved for around the Holidays as one of the many cookies and treats that would be made. This recipe for My Mother’s Fudge turns out beautifully every time I make it.

Ingredients

  • ¾ C. Butter unsalted
  • 2 ½ C. Granulated sugar
  • ⅔ C. Evaporated milk
  • 12 oz. Bag semi-sweet chocolate chips
  • 7 oz. Marshmallow fluff
  • 1 tsp. Vanilla extract

How To Make My Mom’s Fudge

  1. Place the butter, sugar, and milk into a saucepan over high heat on the stove, and bring to a boil, whisking often to combine.
  2. Once boiling, reduce the heat to medium and boil for five minutes.
  3. Remove the mixture from the heat and whisk in the chocolate chips until melted.
  4. Whisk in the marshmallow fluff and vanilla extract.
  5. Pour the mixture into a 9×9 baking dish that has been lined with aluminum foil and sprayed with cooking spray.
  6. Let sit for several hours in the fridge before slicing to serve.

Cajun Shrimp Deviled Eggs

Ingredients

  • 1 dozen Eggs
  • 2 dozen Fresh Shrimp-medium sized
  • 1 tsp Cooking Oil
  • 1/2 small Lemon
  • 2-3 tb Mayonnaise
  • 1/2-1 tb Hot Sauce-depending on spice level
  • 1 tb Sweet Relish
  • 1-2 tsp Old Bay Seasoning + 2 tsp (for Cajun shrimp)
  • 1/4 tsp Garlic Powder
  • 2 tb Fresh Chopped Dill-+ 2tsp (garnish)
  • Salt + Pepper To Taste

How To Make Cajun Shrimp Deviled Eggs

Perfect Boiled Eggs

Gently place eggs in a shallow pot.

Fill with water covering eggs and once eggs begin to boil, turn off heat and cover for 15-20 minutes.

Cajun Egg Filling

Peel eggs, slice in half and in a medium sized bowl, add egg yolks. Place halved egg whites on paper towels to dry.

In the bowl with egg yolks, add listed ingredients beginning with mayo.Taste after each ingredient is added, adjust to your liking and spice level.

Mix until creamy, cover and set aside.

Cajun Shrimp

In medium sized pan on medium/high heat, add olive oil. Pat shrimp dry with a paper towel.Add Ole Bay, stir until well coated.

Sauté shrimp until done (if raw) or until slightly charred.Half-way through cooking, add about 1 tsp of lemon juice to shrimp.

Plating Cajun Shrimp Deviled Eggs

Scoop egg mixture evenly into egg white cups and top with one Cajun shrimp.

Garnish with paprika and dill.

How To Make CHOCOLATE KAHLUA & BAILEY’S PUDDING SHOTS

Ingredients

  • 1/2 cup of Red Velvet Bailey’s or you can use regular
  • 1/4 cup of Kahlua (coffee liqueur)
  • 1 small box JELLO Chocolate Instant Pudding Mix
  • 3/4 cup Milk
  • 8 oz container of Cool Whip
  • Christmas Sprinkles for garnish

How To Make CHOCOLATE KAHLUA & BAILEY’S PUDDING SHOTS

1-Whisk all ingredients together in a large bowl, except for the sprinkles. Add the cool whip a little at a time.
2-Fill shot cups with mixture. *I used a tablespoon for filling.
3-Store in refrigerator or freezer.

How To Make Polish sausage Sauerkraut and potatoes

This crockpot Polish sausage, sauerkraut, and is amazing! The sausage was perfectly cooked and the sauerkraut gave it a delicious flavor, the potatoes were also delicious, and they went perfectly with the other ingredients.

We love this easy crock pot recipe!  Sauerkraut and potatoes just seem to go together.  Add some Polish sausage and you have a meal in a pot!  This is real comfort food and my family is all about comfort food. We love easy crock pot recipes and this one is definitely a keeper. You can cut this recipe in half or double it for a group of people.

Ingredients

  • 5-6 Medium gold potatoes cut into large chunks
  • 16 oz. Sauerkraut
  • 1 ½ lb. Polish sausage cut into large pieces
  • ½ C. Chicken broth
  • 1 tsp. Caraway seeds
  • 1 Bay leaf
  • Salt and pepper to taste

How To Make Polish sausage Sauerkraut and potatoes

  • Place the sauerkraut into the bottom of the crockpot.
  • Cover the sauerkraut with the potatoes and then the sausage.
  • In a bowl, combine the broth, caraway seeds, and bay leaf.
  • Pour the mixture over the ingredients in the crockpot, and add salt and pepper to taste.
  • Place the lid on the crockpot and cook on high for 4 hours. Mix well before serving.

SOUTHERN FRIED SALMON PATTIES

Ingredients

1 – 12oz. can of Pink Salmon
2 – whole Eggs
1/4 – cup of chopped Onions
1/4 – cup of chopped Bell Pepper
2 – Tablespoons of Yellow Corn Meal
1/2 – teaspoon Salt
1/2 – teaspoon Garlic Powder
2 – Tablespoons of Mayonnaise
1 – teaspoon of Worcestershire Sauce
1 – teaspoon of Texas Pete Hot Sauce
1/2 – teaspoon of Ground Black Pepper
1 – slice of crumbled up White Bread
1/4 – cup of Flour, added slowly, as needed to adjust consistency.

Instructions

Open the canned Salmon and place in a colander in the sink to drain.
Remove any large bones if not wanted. They are edible however.
Flake the salmon with a fork.
Place the flaked salmon in a large mixing bowl.
Add two whole Eggs
Add the chopped Onions and the chopped Bell Peppers
Add the Corn Meal
Add Salt
Add Garlic Powder
Add Mayonnaise
Add Worcestershire Sauce
Add Texas Pete Hot Sauce
Add Ground Black Pepper
Crumble the slice of bread and toss it in the bowl.
Gently mix the ingredients together, don’t over work.
If the mixture is very moist, add flour as needed to adjust consistency.
Divide and shape the mixture into four patties. Set aside.
Heat a skillet to medium heat and add shortening or oil for frying.
Place the patties in the skillet, brown the bottom.
Carefully turn the patties over and brown the other side.
When brown on both sides, remove from skillet and drain on paper towel.
Serve while warm and Enjoy!
