Ingredients:
- °3/4 cup of sugar
- °1 large egg
- °1 1/2 cups all-purpose flour
- °2 teaspoons baking powder
- °1/4 teaspoon salt
- °1/4 teaspoon nutmeg
- °1/4 cup vegetable oil
- °3/4 cup of milk
- °1 teaspoon vanilla
- °2 tablespoons of melted butter
- °1/2 cup baking sugar (I added a little cinnamon)
Directions:
Preheat the oven to 350. Grease a muffin tray with a little grease. In a large bowl, whisk the sugar and eggs together until light in color.
In a small bowl, combine flour, baking powder, salt and nutmeg.
Pour the mixture into the egg mixture and stir to combine.
Pour in vegetable oil, milk and vanilla extract.
Divide batter evenly among 12 muffin cups, filling them about 3/4 full.
Bake for 15 to 18 minutes, until a toothpick inserted in the center comes out clean.
While the muffins are baking, melt the butter and pour the remaining sugar into a small bowl.
When the muffins are done, brush the surface of each with a little melted butter, then remove from the pan and roll in the sugar. cool on wire rack.
