Nostalgic Old Fashioned Potato Candy: A Sweet Trip Down Memory Lane

Preparing the Potato Base
Cook the Potato:
Peel and dice the potato. Place it in a small saucepan and cover with water.
Bring to a boil and cook until the potato pieces are tender, about 10-15 minutes.
Drain the potato and mash it until completely smooth. You should have about 1/2 cup of mashed potato.
Add Vanilla and Sugar:
In a large mixing bowl, combine the mashed potato with the vanilla extract.
Gradually add the sifted powdered sugar, 1 cup at a time, mixing well after each addition. Continue adding powdered sugar until the mixture forms a stiff, dough-like consistency. This may take 6-8 cups of powdered sugar, depending on the moisture content of the potato.
Rolling and Filling
Prepare the Rolling Surface:
Dust a clean work surface with powdered sugar to prevent sticking. Also, dust a rolling pin with powdered sugar.
Roll Out the Dough:
Transfer the potato candy dough onto the prepared surface.
Roll out the dough into a large rectangle, about 1/4 inch thick. If the dough is too sticky, add a bit more powdered sugar.
Add the Peanut Butter Filling:
Spread a thin, even layer of creamy peanut butter over the entire surface of the rolled-out dough, leaving a small border around the edges.
Roll the Candy:
Starting from one of the long sides, carefully roll the dough into a log, similar to a jelly roll. Take your time to ensure the roll is tight and even.
Chill the Candy:
Wrap the rolled candy log in plastic wrap and refrigerate for at least 1 hour to firm up.
