Instructions:

Take a large soup pot and put the chopped celery, carrots, onions, cabbage, bell peppers, and green beans inside it.

Pour in the tomato juice, whole peeled tomatoes with liquid, beef broth, and enough cold water to cover the vegetables.

Add the onion soup mix to the pot and stir all the ingredients together until they are well combined.

Place the pot on a stove over medium heat and bring the contents to a boil.

Once boiling, reduce the heat to low and let the soup simmer until the vegetables are tender, which should take around 25 minutes.
